Sweet and Sour Chicken

3ish chicken breasts, cubed


1 cup cornstarch

2 eggs, beaten


Season chicken with salt, dip in cornstarch and then egg.  Fry in a good amount of oil til cooked through.


Sweet and Sour Sauce:

3/4 cups sugar

4 T ketchup

1/2 cup vinegar (rice or apple cider vinegar is best)

1 T soy sauce (I think I use more)

1 t garlic salt

Heat on stove; thicken with cornstarch and water.

(If I’m using pineapple in the dish, as well, I will put some pineapple juice in; reduce sugar…or not.)


**Sauce and chicken can be frozen as is; when ready to cook, defrost in microwave or fridge overnight.  Place in oven pan, cover with sauce (add pineapple, veggies) bake at 375 til heated through (about 30 minutes; toss chicken halfway through).
