Cream Scones

2 c flour

1 T baking powder

4 T sugar

1/2 t salt

4 T cold butter, cut into pieces

3/4 c heavy cream

1 egg, beaten

1 T vanilla

2 T sugar for sprinkling on top

*Mix flour, baking powder, sugar, salt, and butter with pastry blender or in a food processor til it resembles coarse crumbs.  Stir in heavy cream, egg, and vanilla, mix until it forms a uniformed dough.  Grab a handful and roll into a ball.  Flatten the ball until approx. 3/4 inches tall (center can be taller than edges).  Sprinkle sugar on top.  Cut in quarters.

Bake on parchment-lined pan at 400 for 15 minutes until bottoms are golden brown.
