1 c flour
1/2 c butter, softened
1/4 c powdered sugar
1 c sugar
2 T grated lemon peel, if desired
2 T lemon juice
1/2 t baking powder
1/4 t salt
*Mix flour, butter, powdered sugar until all crumbly. Press into greased (or parchment-lined) square pan, building up sides to form crust.
Bake crust at 350 for 20 minutes.
Beat remaining ingredients on high for 3 minutes or until light and fluffy. Pour over hot crust.
Bake additional 25-30 minutes or until almost no indentation remains when touched in center.
Cool completely. Sprinkle with powdered sugar.
