4 chicken breasts, cubed
1 1/2 t garlic salt
1 T oil
1 can pineapple tidbits, with juice
1/4 c honey
3 T lime juice
2 T soy sauce
2 t corn starch
*Saute chicken with garlic salt, add drained pineapple (save juice!), cover and simmer 6-8 minutes. Removes chicken from pan. Add honey, lime juice, soy sauce, cornstarch, and remaining pineapple juice to pan. Bring to a boil, stirring. Cook and stir til thick and clear, about one minute. Add chicken and pineapple, heat through.
(Can also add some stir fry veggies in there with the chicken if you want.)
Serve over rice.
*Can freeze as is, though we usually just add everything into the bag and freeze like that…I admit, I occasionally have weird things happen with a reaction between the chicken fat and the lime juice this way, but it still tastes great.
